Enchiladas

I love food.
Have you noticed?
This recipes is my own creation.
No meat, no dairy, no sugar. Super healthy, super tasty, and super filling.


Ingredients:
1 can re-fried beans
(homemade re-fried beans - smash 1 can white & black beans)
1 carrot - chopped (approx 1/2 c.)
1 small zucchini -chopped (approx 1/2 c.)
Jalapeno slices (1/8 c. - to taste) *
1 tomato - diced
1/2 c. salsa
Enchilada Sauce
Healthy corn or spelt sprouted tortilla.

Mix all ingredients (-sauce & tortilla), place 2-3 tablespoons in tortilla and roll up. You may need to place in the pan with the fold down if the tortilla will not stay shut. Cover will enchilada sauce and cook at 350 degrees for 20 minutes. Serve over white basmati or brown rice. (white/brown basmati rice is not stored as long as others and hold more nutrients. However it is more expensive then regular brown rice and for those who are not on as strict of a diet I recommend eating with brown rice.)

  3. good point Erin. I have edited the post above to provide for clarity for that oversight. To re-state, the rice in the picture is white basmati rice which carries more nutrients then regular brown rice, however it is more expensive and for those who are simply trying to be healthy I recommend brown rice.
